Lemon Balm Simple Syrup
There’s something sweet to this syrup that feels like sunshine after rain. Lemon balm lends in soft citrus notes, while a low-hypoglycemic sweetness keeps things steady. A simple way to brighten drinks or desserts.
This simple syrup can be made with different herbs, like rose or peppermint! Try different herbs for different seasons and see what you can use it for. Try adding it to your coffee or drinks like we did in our Lemom Lime Slime Mocktail. You could even try it in your holiday fruit salads or in a fancy yogurt parfait. This one recipe is like a door opening to opportunities!
Why You will love this syrup
LEMON BALM (Melissa Offinalis)-> Lemon balm brings a sense of ease to any blend. Earthy citrus flavor with hints of mint, it carries a calm that feels both grounding and bright. Traditionally used to settle the nerves and lift the mood, it supports focus without overstimulating. I love how the gentle aroma seems to lighten the air and brings a quiet reminder that calm can be both refreshing and energetic. It’s a simple, steady herb with a brightness that nourishes.
Need I say anymore? Lemon balm is one of my personal favorite herbs, but that doesn’t mean it has to be your favorite. That is exactly why I love this recipe, it is a little more respectful to the gut as compared to other artificial sugars that are derived from sucralose like splenda. These artificial sugars are similar to truvia in the sense that they don’t have calories, they are not recognized the same as sugar and not metabolized. The difference between truvia and splenda is that splenda has more potential to disrupt the gut. Splenda can also ‘ironically’ cause insulin spikes and reduce insulin sensitivity after long-term consumption. Truvia doesn’t affect insulin and glucose in the same way that splenda does, the sugar alcohol erythritol is eliminated through urine mostly and there is no affect on blood glucose or insulin levels. There is some concerns on long-term consumption of truvia and the effect on gut health and in both cases, this varies person-person, can be related to excessive consumption, etc.

making the Simple Syrup
You’ll need:
1 Cup Water
1 Cup fresh or ½ cup dried lemon balm (or herbs of choice!)
½ Cup Truvia (~100 g)
Optionally add some crushed stevia leaf for added sweetness!
Instructions
(1) Combine water and herbs in a small-medium saucepan.
(2) Bring to a simmer NOT boiling, then remove from heat and cover. I placed mine into a heat safe jar and capped it.
(3) Steep for 20–30 minutes, then strain out the herbs.
(4) Return the liquid to saucepan, add Truvia, and stir over low heat until dissolved.
(5) Let cool completely before bottling. Store in the refrigerator for up to 2 weeks. Try pairing with the Lemon Lime Slime Mocktail.
A note on our ingredients
This simple and complimenting recipe was designed for my in-person mocktail event. The lemon lime slime mocktail needed something to balance the slight bitterness from the cucumber, and the overwhelming “green” flavor. Combining the lemon balm syrup with the honeydew was a simple touch that truly encompassed all the tastes together beautifully. This will be a fine addition to your summer garden picnics and gatherings, it takes simply rubbing the leaves and smelling the aromatic smell to lift up your spirits.
