Italian-Inspired Caper Egg Salad Tramezzini
This recipe was inspired by a visit to a local tea café where I enjoyed a delicious egg salad sandwich with capers. I loved how the bright, briny flavor added a fresh twist to a familiar favorite, so I couldn't wait to recreate it at home. Served on soft tramezzini bread, a tender crustless Italian sandwich bread often used for tea sandwiches and cafés, it's a simple yet elegant recipe that's perfect for picnics, afternoon tea, or a leisurely lunch.

Tramezzini are known for their incredibly soft texture and neat presentation. To achieve the best results, use fresh, fluffy white bread and remove the crusts before assembling. A creamy filling helps the sandwiches hold together without becoming dry, while chilling them briefly before slicing creates clean, even edges.
These sandwiches are also wonderfully versatile. Try adding fresh herbs, sprouts, cucumber, or a different protein to create your own variation. They're ideal for afternoon tea, picnics, brunches, or preparing ahead for gatherings.
INGREDIENTS
4 Eggs (I used Chinese Tea Eggs) Cut into small bits
4 Tbsp Mayo (OR 3 Tbsp mayo, 1 Tbsp Sour Cream)
2 Tsp Dijon Mustard
1 Tbsp Onion Flakes
1 Tbsp Capers (Rinsed, drained, and chopped)
1 Tbsp Fresh Dill (or 1 tsp dried)
Freshly ground salt and pepper to taste
Tramezzini Bread OR Thick Fluffy White Bread (I kept the crust, but traditionally you would have crustless)
Step by Step Instruction
(1) PREPARE: Tea Eggs following separate recipe OR classic hard boiled eggs.
(2) MIX: In a medium-large bowl, mix together all ingredients and prepared capers well.
(3) TASTE: Taste as you add ingredients and add anything that may be missing like more pepper. Once you are satisfied, layer onto your bread and optionally top with lettuce from the garden. If you are not serving right away, you can store the salad for a few days sealed in the fridge.
BIGGEST TIP > Taste before adding a new layer: Start with a smaller amount to play around and find your flavor!
